Ma Jiang Noodles


1 lb Lomein noodles or linguine 1 tablespoon oil 1 tablespoon chopped green onions 1/3 cup diced red onion 1/3 cup chopped zucchini 1/3 cup chopped red bell pepper

1 cup Ying's Dan Dan Noodle Sauce 1/4 cup creamy peanut butter 1/8 teaspoon ground red chili (optional) 1/2 cup water ½ cup chopped cilantro


1. Cook noodles according to the instructions. Drain.

2. Heat oil in a wok or skillet, add green onion and stir for 5 seconds. Add red onion, zucchini and red bell pepper and stir fry for 30 seconds.

3. Add Ying’s Dan Dan Noodle Sauce, peanut butter, ground red chili and water. Bring it to a boil while stirring.

4. Make sure peanut butter is dissolved and mixed well. Turn down heat and let it simmer for 1 minute. Remove from heat. You can either serve hot like you do with pasta or combine noodles with the sauce first and serve cold. Garnish with chopped cilantro. Enjoy this delicious noodle dish!
