1 English cucumber 1/4 cup shrimp chunks 1/3 cup pineapple, cut into small pieces 2 tablespoons chopped yellow bell pepper 2 tablespoons chopped green bell pepper 1 tablespoon chopped red onion 2 tablespoons Ying's Yum Yum Sauce
1. Cut cucumber into 1 1/2-inch sections.
2. Scoop out seeds with a small spoon or table knife, but only part-way so as to keep one end closed to make a cup.
3. In a mixing bowl, combine shrimp, pineapple, bell peppers, red onion and Ying's Yum Yum Sauce. Mix well.
4. Fill each cucumber cup with the shrimp salad. Enjoy these delicious and easy salad cups!
